We are so excited to introduce our new registered dietitian and Certified Diabetes Care and Education Specialist, Karissa Lucio! With over 10 years of experience, she can help you find your stride with your meal plan and can provide guidance for lifestyle changes to improve your overall wellbeing. Karissa believes food is medicine and strives to bridge the gaps between eating for health, healthy eating on a budget, and healthy, nutritious foods that taste fantastic.
National Nutrition Month
As we welcome Karissa to the team, we’d also like to recognize March as National Nutrition Month. The Academy of Nutrition and Dietetics established the annual campaign to encourage everyone to learn about making informed food choices and develop healthful eating and physical activity habits. This year’s theme is “Beyond the Table,” which addresses the farm-to-fork aspect of nutrition. By learning about where our foods come from and how they are distributed, we can find ways to enjoy healthy items by not only navigating grocery stores, but also using local farmers markets for fresh produce and locally sourced proteins. The farm-to-fork concept also allows us to explore sustainability practices that decrease food waste and helps keep food costs low.
Ways to Participate in National Nutrition Month
There are so many ways you can get involved with National Nutrition Month to kickstart your healthy eating. Here are some easy ways to participate:
- Try a new fruit or vegetable each week during the month of March (and beyond!)
- Include more meatless meals by swapping out your chicken/fish/beef/pork for beans or lentils
- Eat more meals together as a family
- Practice mindful eating by limiting screen time at meal times
- Move more! Walk in place during TV commercials, park further away at the grocery store, or take in the wildflowers by going for a daily walk
If you’d like to learn about some more ways to participate, visit the Academy of Nutrition and Dietetics website for more information. They even have tips about eating right on a budget, eating on the run, and reducing waste. Their goal is to make healthy eating easier than ever for everyone.
