Wellness Wednesdays: Eat More Red & Green Veggies

With Christmas right around the corner, colors like red and green can be found almost everywhere. It is especially important to include red and green vegetables in your diet, as they can aid in the prevention of cancer, improve memory function, support bone and heart health, and may even lower the risk of type 2 diabetes. The following recipe is one way to include more of these bright and colorful vegetables into your current diet and lifestyle:

Quick Quinoa Bowl

  • Spoon refried beans or drained and rinsed canned black beans on top of cooked quinoa. (Tip: use “Boil in a bag” quinoa for an even shorter cook time). Then layer on toppings such as chopped lettuce, diced tomatoes, red and green bell peppers, onions, plus some guacamole and salsa. Mix and enjoy!
